Please excuse my lack of posting as of late. The very limited natural light in the evening has really done a number on how often I’m able to photograph our dinner. I’m working on a solution though, and I should be up and running again very shortly. To tide you over, here’s our breakfast from this morning – starring none other than our favorite superfood.
Kale, black beans, onion, ham, cheese, and garlic over a baked corn tortilla and topped with an egg.
Red Snapper over a bed of kale, potatoes and fresh green beans in a dijon dressing. After we ate this meal I looked up Red Snapper on the Seafood Watch website (which I normally do before I buy it) and learned it is not a great choice. This will help me remember to check before I buy in the future.
Thought we should make up for all the potatoes and meat we’ve been consuming recently. Kale, garlic, onions, and yellow tomatoes paired with red quinoa and topped with a poached egg. Oh, and I’ve created a category for kale – I’m sure you’ve noticed we eat quite a bit of it!
