Roasted chicken, spinach mashed potatoes and sauteed kale with yellow tomatoes. We roasted the chicken using a really simple recipe: rinse and thoroughly dry chicken, stuff cavity with fresh rosemary and any other herbs you have on hand, rub with olive oil and season with kosher salt and pepper. Bake on 425 for about an hour or until it has reached the correct internal temperature for poultry.
